Once upon a time there was Annette Poulard

In 1888, Annette Poulard opened the doors of her modest inn, which at the time was called "À l'omelette renommée de la mère Poulard", armed with very little, but driven by an immense desire: to entertain, to share and to please.

Annette observed the pilgrims on their way to the Abbey and realised that they arrived hungry and tired after crossing the bay on foot. To cheer them up, she came up with the idea of offering a soufflé omelette cooked over a wood fire, which has made her reputation over the years. Since then, the most famous celebrities have come to taste the famous omelette.

Thus was born the legend of La Mère Poulard and the reputation of what would soon become the best restaurant on Mont Saint-Michel. A place where celebrities and pilgrims, the anonymous and the curious, found a welcoming table and sincere warmth. Today, that spirit continues to live on in every room, every plate, every smile. Annette's tradition lives on, in the very heart of Mont Saint-Michel, for all those who are looking for more than just a place: an experience.

A secret

The omelette

The first secret of this omelette was that it was "the lucky omelette of the Presidents". Presidential candidates used to travel miles to taste it. Whether this was due to superstition or a love of taste, the story doesn't tell - perhaps a bit of both!

The recipe is well guarded, and only a privileged few in the kitchens of La Mère Poulard have the honour of knowing the recipe for this soufflé omelette cooked over a dry wood fire. As for the rest, it's a secret, and it's up to you to come and savour it directly at the inn...
