The menus have changed, but the intention remains the same: to please all gourmets in a friendly atmosphere. Today's cuisine is more modern, featuring products from the Bay of Mont Saint-Michel and regional specialities, but still very generous. The omelette, the restaurant's signature dish since 1888, remains a staple on the menu, still prepared according to Annette Poulard's traditional recipe. One of the secrets of its inimitable taste? Fresh eggs from the Delaunay family farm, a partner of the Auberge for five generations. Their hens, reared in the open air and fed with care, produce Label Rouge eggs that perpetuate the quality of a century-old tradition.

La Mère Poulard recently chose Christophe Pacheco to take charge of the kitchens in its restaurants, thus becoming the showcase for the art of living so dear to Annette Poulard.
Meilleur ouvrier de France in 2011, Chef Pacheco combines his fresh approach with the DNA of La Mère Poulard, skilfully blending modernity and tradition.
He draws up the restaurant's menus in direct contact with the producers, and guides the spirit of the kitchens, with the generous, convivial approach of La Mère Poulard in mind.

Each menu is designed to offer an authentic experience, featuring fresh, local produce from our region. We favour short circuits and the treasures that the Bay of Mont Saint-Michel has to offer, while paying particular attention to seasonality, which guides the preparation of each dish.
